Chocolate Chip Cookies (for high altitude)

One of the many baked goods I couldn’t get right once moving to Colorado was cookies. I tried so many different recipes, tweaked and combined different recipes but this one tops them all! I doubled the original recipe because it just wasn’t enough for all my cookie monsters! I have to give credit to Kelley from Mountain Mama Cooks. Check out her website, mountainmamacooks.com






High altitude
Chocolate chip cookies

(High altitude) Chocolate Chip Cookies




16 TBSP salted butter (two sticks), softened

1 C sugar

½ C packed brown sugar

4 tsp vanilla extract

2 large eggs

3 ½ C all-purpose flour

1 tsp baking soda

½ tsp salt

1 C chocolate chips or chunks




  • Preheat the oven to 350F degrees.

  • In a medium bowl, combine flour, baking soda and salt; set aside.

  • Using a stand mixer or a hand mixer, in a large bowl beat the softened butter, white sugar and brown sugar until creamy.  Add the vanilla and eggs; beat on low speed until just incorporated.  Make sure to scrape the sides of the bowl.

  • Add the flour mixture to the sugar mixture on low speed until a soft dough forms. Fold in chocolate chips or chunks.

  • Roll the dough into 1-2inch balls and place on a cookie sheet.

  • Bake for 9-11 minutes until the cookies look puffy and barely golden. Do not over bake the cookies.  (I’m at an altitude of 5,545 ft and I only need to bake them for 10 minutes,so be sure to keep an eye on them)

  • Store cookies in an airtight container.  Makes about 24 cookies.
