Chocolate Chip Cookies (for high altitude)

One of the many baked goods I couldn’t get right once moving to Colorado was cookies. I tried so many different recipes, tweaked and combined different recipes but this one tops them all! I doubled the original recipe because it just wasn’t enough for all my cookie monsters! I have to give credit to Kelley from Mountain Mama Cooks. Check out her website, mountainmamacooks.com
(High altitude) Chocolate Chip Cookies
16 TBSP salted butter (two sticks), softened
1 C sugar
½ C packed brown sugar
4 tsp vanilla extract
2 large eggs
3 ½ C all-purpose flour
1 tsp baking soda
½ tsp salt
1 C chocolate chips or chunks

Preheat the oven to 350F degrees.
In a medium bowl, combine flour, baking soda and salt; set aside.
Using a stand mixer or a hand mixer, in a large bowl beat the softened butter, white sugar and brown sugar until creamy. Add the vanilla and eggs; beat on low speed until just incorporated. Make sure to scrape the sides of the bowl.
Add the flour mixture to the sugar mixture on low speed until a soft dough forms. Fold in chocolate chips or chunks.
Roll the dough into 1-2inch balls and place on a cookie sheet.
Bake for 9-11 minutes until the cookies look puffy and barely golden. Do not over bake the cookies. (I’m at an altitude of 5,545 ft and I only need to bake them for 10 minutes,so be sure to keep an eye on them)
Store cookies in an airtight container. Makes about 24 cookies.
