No Churn Ice Cream!

I scream, you scream, we all scream for ice cream! This no churn ice cream was inspired by Erin Jeanne McDowell from Food Network and her No Churn S’mores Ice Cream. The base for this can be eaten plain or with endless combination of possibilities. The recipe below is my version of mint chocolate chip ice cream.
Mint Chocolate Chunk Ice Cream
2 C heavy cream
1 tsp vanilla extract
2-3 tsp peppermint extract
Pinch of salt
(2-3 drops of green food coloring if desired.)
1 can sweetened condensed milk
1 C semi sweet chocolate chunks, roughly chopped; plus some to decorate
Add the heavy cream to a large bowl and whisk on medium speed increasing to medium high speed with a standing mixer or hand mixer until almost medium peaks.
Add in vanilla extract, peppermint extract and a pinch of salt. (This is where you can add in green food coloring if desired.) Mix until medium peaks.
While the mixer is on medium speed, slowly pour in the sweetened condensed milk until completely incorporated.
Gently fold in chocolate chunks with a spatula. Sprinkle some chocolate chunks on top if desired. Pour into an 8x8 container and place plastic wrap on top.
Freeze for 2-3 hours until completely set. It will last in the freezer for up to one week.
