Corn Bread

Corn bread is perfect for breakfast with some butter and jam, or with some barbeque ribs and veggies. It's a little sweet with a great crumb texture.

Corn bread
Ingredients
I C all purpose flour
1 C cornmeal
2 ½ tsp baking powder
1 tsp salt
2 TBSP unsalted butter, melted
2 large eggs, lightly beaten
2 TBSP sugar
1 ¼ C milk
Preheat oven to 425 degrees. Grease a 8x8 inch baking pan or a loaf pan.
In a large bowl, combine flour, cornmeal, baking powder and salt.
In a separate bowl combine butter, eggs, sugar and milk.
Make a well in your flour mixture and stir your wet ingredients in with a fork quickly to combine.
Pour batter into pan and bake for 20-25 mins or until golden brown. If a toothpick comes out clean when placed into the center, it's done. Serve warm.
Below 3500 ft:

¼ C sugar
3 tsp baking powder
1 tsp salt
1 C milk
1 egg, lightly beaten
¼ C unsalted butter, melted

Honey Cornbread

¼ tsp vanilla extract
¼ C honey
Preheat oven to 400 degrees. Grease a 8x8 inch baking pan or a loaf pan.

In a separate bowl combine butter, eggs, sugar, honey, vanilla and milk.
