French Onion Soup

Nothing says winter time to me than a nice, hot cup of cheesy french onion soup. Well, now you dont have to go out to get it, you can make it at home!
French Onion Soup
Serves 4- 8oz bowls
Ingredients
1 oz unsalted butter
2.5 ea large onions, sliced thin
1 qt plus 1 oz unsalted beef stock
To taste salt
To taste pepper
.5-1 fl oz sherry (optional)
As needed french bread
6 oz gruyere, sliced or shredded
Heat the butter in large pot over medium low heat.
Add onions and cook until golden brown, stirring occasionally. **Note: onions must cook slowly and must be evenly browned. This is process is slow and will take about 45 minutes to an hour. Do not brown too fast or use high heat.**
Deglaze with 1 oz beef stock. Reduce to au sec/almost dry.
Add in the rest of your beef stock and bring to boil. Reduce to a simmer. Simmer until onions are tender, about 20 minutes.
Season to taste with salt and pepper. Add sherry, if desired.
6. Cut bread into slices about 3/8 in. thick. (You need just enough bread to cover top of soup in its serving crock.) Toast bread slices in the oven under broiler.
Fill soup crock with soup. Place 1 or 2 slices of toasted bread on top and cover with cheese.
Put under broiler until cheese is bubbly and lightly browned. Serve immediately.
