No more store bought pudding!

While doing my externship for Lehigh Valley BBQ, I made this delicious dessert to add to their Mother's Day special. This creamy, rich pudding is so easy to make, you'll never want to buy store bought pudding mix again! A decadent treat; fabulous for any occasion. Chocolate Pudding Parfait
Serves 7
Ingredients
1 ¾ C Chocolate Pudding Mix, recipe follows
2 C milk
2 C heavy whipping cream
1 tsp vanilla extract
Chocolate Pudding Mix:
Yield: 3 1/2 cups dry mix
3 oz Dutch-processed cocoa, (1 cup)
2 oz cornstarch, (1/2 cup)
6 oz confectioners' sugar, (1 1/2 cups)
1 1/2 oz instant non-fat dry milk, (1/2 cup)
1 tsp salt
Whipped Cream

2 C heavy whipping cream
2 TBSP sugar
1 tsp vanilla
10 oreos, crushed
Chocolate Pudding Mix:
In a large bowl or plastic container with a lid, combine the cocoa, cornstarch, sugar, instant non-fat dry milk, and salt.
Store in an airtight container in the refrigerator for up to 1 month.
Chocolate Pudding:
Place 1 3/4 cups of dry pudding mix into a medium saucepan. Add milk and heavy cream and whisk to combine. Over medium heat, bring mixture to a boil, continuously whisking gently.
Reduce heat to low and cook for 4 minutes while continuing to whisk. Remove from heat and stir in vanilla.
Pour the mixture through a sieve and into individual dishes or a 1 1/2-quart serving dish. Cover the surface of the pudding with plastic wrap. Place in the refrigerator to chill completely before serving, approximately 4 hours.
Whipped Cream:
In a chilled bowl, put cream sugar and vanilla and whip until fluffy and holds its shape.
Take half of you whipped cream and place in a separate bowl.
Put 20 oreos in a large freezer bag and crush. Fold 1 Cup of crushed oreos into half of your whipped cream.
Assemble parfait in a 9 oz serving cup. Start layering with pudding, then oreo whipped cream, pudding then plain whipped cream with crushed oreos to garnish.
